1 tablespoon fresh lemon juice
1/4 cup olive oil
1/4 cup Apple Cider Vinegar
1/2 teaspoon freshly ground black pepper
1/4 teaspoon pink salt (add more to your liking)
1 Bunch torn kale leaves into small pieces - about 5/6 cups
1/4 medium purple cabbage julienned
4 teaspoons unsalted pepitas
Combine first 5 ingredients, stirring until all is mixed well. Add kale and cabbage; massage for at least five minutes or until kale starts looking soft. Let stand 10 minutes. Add pepitas/pumpkin seeds.
Ready to serve!
